The name Varvàra is in honor of Baroness Varvàra Wrangler, wife of Count Ugolino della Gherardesca and great-grandmother of Count Federico Zileri Dal Verme, the current owner.
This wine was born from the desire to develop a more immediate product while continuing to give importance to the fruit.

Lunga macerazione sulle bucce per Merlot e Cabernet Sauvignon; una conduzione di fermentazione con pochi rimontaggi all’aria per mantenere in stress il lavoro dei lieviti; picco di temperatura 30 gradi sui Cabernet, ed un periodo di contatto bucce, macerazione, 15 giorni per Syrah e Petit Verdot, mentre oltre 3 settimane per Merlot e Cabernet Sauvignon; obbiettivo da Cabernet Sauvignon e Merlot la profondità e struttura, dallo Syrah succosità e speziatura, metre il Petit Verdot una nota di austerità tannica ed olfattiva; (qui presente al 10%)
Nel 2008, annata ricca, un affinamento più lungo rispetto alle annate precedenti, 16 mesi in legno; questo al fine di rendere definito e misurata la ricchezza di questo vino.
